Il est r\u00e9alis\u00e9 \u00e0 partir de lait de vache, et <strong>nous vient de Bourgogne<\/strong>. On le produit aussi en Normandie, avec 12 jours d&rsquo;affinage, et il affiche un respectable <strong>72% de mati\u00e8re grasse !<\/strong><\/p>\n<p><!-- \/wp:paragraph --><!-- wp:paragraph --><\/p>\n<p>Eh oui, 72% : les fromages triple-cr\u00e8me sont en effet des fromages frais <a href=\"https:\/\/laboxfromage.fr\/blog\/fromages-les-plus-caloriques\/\" data-type=\"post\" data-id=\"14644\">particuli\u00e8rement \u00e9lev\u00e9s en mati\u00e8re grasse&#8230;<\/a> L&rsquo;un des plus c\u00e9l\u00e8bre du genre n&rsquo;est autre que le <a href=\"https:\/\/laboxfromage.fr\/blog\/mascarpone\/\">mascarpone italien<\/a>. C&rsquo;est ce qui fait que le Brillat a <strong>une p\u00e2te particuli\u00e8rement onctueuse, voire m\u00eame coulante <\/strong>en certains endroits du fromage ! Si l&rsquo;on ajoute \u00e0 cela une <strong>cro\u00fbte fine et duveteuse<\/strong>, d&rsquo;une belle couleur blanc ivoire&#8230; Difficile de baptisa \u00e0 l&rsquo;\u00e9poque du nom Excelsior<\/strong>. Mais en 1930, un cr\u00e9mier (qui a eu le nez tr\u00e8s fin) d\u00e9cide de <strong>le commercialiser \u00e0 Paris sous un autre nom<\/strong> ! Henri Androu\u00ebt &#8211; c&rsquo;est son nom &#8211; jette son d\u00e9volu sur \u00ab\u00a0Brillat-Savarin\u00a0\u00bb, en hommage \u00e0 un certain gastronome&#8230;<\/p>\n<p><!-- \/wp:paragraph --><!-- wp:paragraph --><\/p>\n<p><strong>Le succ\u00e8s est imm\u00e9diat,<\/strong> et les Dubuc acceptent peu apr\u00e8s que le terme Brillat Savarin devienne la marque de leur fromage Excelsior. Ce livre est celui pour lequel il est le plus c\u00e9l\u00e8bre : <strong>il lui a valu les louanges de Balzac<\/strong> ou de Roland Barthes plus r\u00e9cemment, et d&rsquo;\u00eatre compar\u00e9 \u00e0 La Rochefoucauld ou \u00e0 La Bruy\u00e8re !<\/p>\n<p><!-- \/wp:paragraph --><!-- wp:paragraph --><\/p>\n<p>Bref, <strong>un classique de la litt\u00e9rature fran\u00e7aise<\/strong>, qui en plus traite du sujet le plus chauvin qui soit : la bonne nourriture. Il y a aborde toutes sortes de sujets qui sont consid\u00e9r\u00e9s aujourd&rsquo;hui comme des fondements de la gastronomie hexagonale. Il porte alors le nom de <a href=\"https:\/\/les-alpages.fr\/article\/fromage\/brillat-savarin-a-la-truffe\/\">R\u00e9gal de Bourgogne \u00e0 la truffe<\/a> ! En effet, l&rsquo;ajout de truffe l&#8217;emp\u00eache de conserver le nom de \u00ab\u00a0brillat-savarin\u00a0\u00bb, en raison du cahier des charges de son IGP.<\/p>\n<p><!-- \/wp:paragraph --><!-- wp:paragraph --><\/p>\n<p>C&rsquo;est une des meilleures ventes de la fromagerie des Alpages, et <strong>les clients ne tarissent pas d&rsquo;\u00e9loges \u00e0 son \u00e9gard.<\/strong> L&rsquo;avantage, c&rsquo;est qu&rsquo;en version truff\u00e9e ou non, c&rsquo;est un fromage qui a une large p\u00e9riode de consommation :<strong> il sera parfait d&rsquo;avril \u00e0 octobre<\/strong>, mais vous pouvez \u00e9largir cette recommandation de mars \u00e0 d\u00e9cembre.
