que la Cancoillotte ?<\/h2>\n<p>Surnomm\u00e9e \u201cla colle\u201d dans sa r\u00e9gion d\u2019origine, la cancoillotte est <strong>une sp\u00e9cialit\u00e9 fromag\u00e8re \u00e0 la texture coulante issue de fromage fondu<\/strong>. Elle se tartine onctueusement sur du pain, sublime des recettes ou se d\u00e9guste \u00e0 la cuill\u00e8re, un r\u00e9gal !\u00a0<br \/>La Cancoillotte suit un processus de fabrication unique. Elle est le r\u00e9sultat d\u2019un assemblage de <strong>metton<\/strong> (fromage au lait de vache, affin\u00e9 puis press\u00e9 en un bloc friable, sans mati\u00e8re grasse) chauff\u00e9 avec de l\u2019<strong>eau<\/strong> et du <strong>beurre<\/strong>. Deux explications subsistent. La premi\u00e8re aurait \u00e9t\u00e9 retrouv\u00e9 dans des textes latin, sous la d\u00e9nomination <strong>\u00ab\u00a0concoctum lactem\u00a0\u00bb<\/strong>, qui signifie lait cuit. La seconde hypoth\u00e8se est plus r\u00e9cente est li\u00e9e directement \u00e0 la langue franc-comtoise. Cancoillotte viendrait du mot <strong>\u00ab\u00a0coille\u00a0\u00bb<\/strong> qui signifie cailler. Les deux sc\u00e9narios collent, \u00e0 vous de voir&#8230;<\/p>\n<h3>Les origines franc-comtoises de la Cancoillotte \ud83d\udc04<\/h3>\n<p>Au m\u00eame titre que le <strong><a href=\"https:\/\/laboxfromage.fr\/blog\/le-fromage-mont-dor-pour-se-rechauffer-avec-gourmandise\/\">Mont d\u2019Or<\/a><\/strong>, le <a href=\"https:\/\/laboxfromage.fr\/blog\/morbier-aop-fromage-cendre-du-jura\/\"><strong>Morbier<\/strong><\/a> ou encore le <strong><a href=\"https:\/\/laboxfromage.fr\/blog\/comte\/\">Comt\u00e9<\/a><\/strong>, la Cancoillotte figure fi\u00e8rement sur les plateaux de fromages franc-comtois.<br \/>Tout a commenc\u00e9 dans cette belle r\u00e9gion fromag\u00e8re il y a plus de 2000 ans. C\u2019\u00e9tait en 2016 que l\u2019<strong><a href=\"https:\/\/www.cancoillotte-igp.fr\/cancoillotte\/association-promotion-cancoillotte\/\">Association de Promotion de la Cancoillotte<\/a><\/strong> (oui elle existe) avait d\u00e9pos\u00e9 la demande d\u2019IGP <strong>dans le but d\u2019accro\u00eetre la notori\u00e9t\u00e9 de ce fromage<\/strong>. Le pr\u00e9sident de l\u2019association avait vu juste, en misant d\u00e9j\u00e0 sur la richesse en prot\u00e9ines et la faible quantit\u00e9 de mati\u00e8re grasse qui diff\u00e9rencient la Cancoillotte des autres fromages et faisant d\u2019elle un aliment d\u00e9sormais tr\u00e8s pris\u00e9. <strong><br \/>Le label IGP atteste aujourd\u2019hui du savoir-faire et de la qualit\u00e9 de ce fromage<\/strong>,\u00a0 via le respect d\u2019un cahier des charges exigeant. En effet, pour pouvoir b\u00e9n\u00e9ficier de cette appellation, il faut qu\u2019au moins une des \u00e9tapes de fabrication ait lieu dans une zone g\u00e9ographique donn\u00e9e, li\u00e9e \u00e0 son savoir-faire unique et attestant de son authenticit\u00e9.
