Et puisqu&rsquo;une jolie tomme au th\u00e9 sauvage des Vosges vous attend dans notre box de mai, c&rsquo;est l&rsquo;occasion parfaite pour <strong>d\u00e9cortiquer ce fromage montagnard embl\u00e9matique.<\/strong><\/p>\n\n\n\n<!--more-->\n\n\n\n<h2 class=\"wp-block-heading\">\u00c0 la rencontre des diff\u00e9rentes tommes de montagne<\/h2>\n\n\n\n<p>Une Tomme, commun\u00e9ment, <strong>c&rsquo;est un fromage de montagne.<\/strong> Tout simplement ! Enfin, non, pas si simplement que cela\u2026 On parle ici d\u2019un fromage en forme circulaire fabriqu\u00e9 en zone de montagne, au lait de ch\u00e8vre, de brebis ou de vache. Si l&rsquo;on a affaire ici majoritairement \u00e0 des fromages de Savoie (quasiment tous les massifs alpins produisent la leur), chacune a sa sp\u00e9cificit\u00e9.<\/p>\n\n\n\n<p>C&rsquo;est pour cela que l&rsquo;on retrouve toujours une pr\u00e9cision g\u00e9ographique apr\u00e8s son nom : de Savoie, de Chartreuse, de Tarentaise, de Valmorel, du Vercors&#8230; Chaque montagne a droit \u00e0 sa vari\u00e9t\u00e9, dont <strong>le go\u00fbt sera influenc\u00e9 par les p\u00e2turages sp\u00e9cifiques<\/strong> s&rsquo;offrant aux brebis, vaches ou ch\u00e8vres.<\/p>\n\n\n\n<figure Un beau palmar\u00e8s montagnard !<\/figcaption><\/figure>\n\n\n\n<div style=\"height:11px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p>Ce compl\u00e9ment au terme \u00ab\u00a0tomme\u00a0\u00bb peut \u00e9galement sp\u00e9cifier le type de lait utilis\u00e9. La p\u00e2te varie d&rsquo;un jaune p\u00e2le \u00e0 un blanc ivoire soutenu, <strong>souvent avec de petites asp\u00e9rit\u00e9s<\/strong>. Cela concerne \u00e9videmment les tommes montagnardes bien rustiques et traditionnelles.<\/p>\n\n\n\n<p>Ainsi, <strong>la tomme de ch\u00e8vre offrira une p\u00e2te d&rsquo;un blanc immacul\u00e9<\/strong> et une cro\u00fbte bien plus fine et douce que ses consoeurs des Alpes. Celle du Vercors est encore un autre sp\u00e9cimen, que l&rsquo;on pourrait presque confondre avec un <a href=\"https:\/\/laboxfromage.fr\/blog\/saint-marcellin-igp\/\">Saint-Marcellin<\/a> de prime abord ! Bref, vous le comprendrez : l&rsquo;habit ne fait pas le moine, et le terme ne fait pas le fromage&#8230;<\/p>\n\n\n\n<figure class=\"wp-block-pullquote has-border-color has-text-color\" style=\"border-color:#557093;color:#557093\"><blockquote><p>Doit-on \u00e9crire Tomme ou Tome ? La seconde orthographe aurait de quoi surprendre les plus litt\u00e9raires d&rsquo;entre vous. Et pourtant !<strong> La Tome des Bauges, qui est la seule \u00e0 s&rsquo;\u00e9crire ainsi,<\/strong> tient son nom et son &lsquo;m&rsquo; unique du mot \u00ab toma \u00bb. Ce terme signifie en patois savoyard \u00ab fromage fabriqu\u00e9 dans les Alpages \u00bb. CQFD.<\/p><\/blockquote><\/figure>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h2 class=\"wp-block-heading\">La tomme parfum\u00e9e, pour \u00e9picer votre plateau de fromages<\/h2>\n\n\n\n<p>Tomme \u00e0 la bi\u00e8re, tomme aux fleurs, tomme au fenouil, tomme aux orties&#8230; Voil\u00e0 des fromages qui, \u00e0 l&rsquo;instar des petits ch\u00e8vres frais, se pr\u00eatent \u00e0 merveille \u00e0 des associations culinaires.<\/p>\n\n\n\n<p>On peut ainsi <strong>les aromatiser au cours de leur affinage<\/strong> avec des feuilles de th\u00e9, des c\u00f4nes de houblon ou encore des brisures de truffes pour cr\u00e9er de vraies merveilles. D&rsquo;une p\u00e2te press\u00e9e non-cuite au lait cru, on passe alors \u00e0 du <a href=\"https:\/\/laboxfromage.fr\/blog\/fromage-lait-cru-ou-pasteurise\/\">lait pasteuris\u00e9<\/a>, comme c&rsquo;est souvent le cas avec les fromages aromatis\u00e9s ou retravaill\u00e9s.<\/p>\n\n\n\n<p>On peut incorporer ces aromates dans la p\u00e2te elle-m\u00eame, ou bien en parsemer la cro\u00fbte. Perceptibles ou non \u00e0 l&rsquo;\u0153il nu, <strong>ces petits ajouts font vraiment la diff\u00e9rence une fois en bouche.<\/strong><\/p>\n\n\n\n<figure class=\"wp-block-gallery aligncenter
