Son nom vient du village \u00e9ponyme du plateau d&rsquo;Albion, non loin du Mont Ventoux, au coeur du d\u00e9partement des <strong>Alpes de Haute Provence<\/strong>.<\/p>\n<p>Cr\u00e9\u00e9 par des fermiers d\u00e9sireux de <strong>conserver leurs fromages jusqu&rsquo;en hiver<\/strong> (moment o\u00f9 les ch\u00e8vres ne produisent plus de lait), le Banon \u00e9tait donc <strong>envelopp\u00e9 dans une feuille de ch\u00e2taignier s\u00e9ch\u00e9e <\/strong>et ferm\u00e9e par un brin de raphia, ce qui lui permet de rester bien moelleux des mois durant.<\/p>\n<p><!-- \/wp:paragraph --><!-- wp:paragraph --><\/p>\n<p>Sa r\u00e9gion d&rsquo;origine \u00e9tant propice aux climats chauds et secs, ce petit fromage de ch\u00e8vre \u00e9tait<strong> fabriqu\u00e9 gr\u00e2ce \u00e0 la technique du caill\u00e9 doux<\/strong> ou coagulation rapide, ce qui lui conf\u00e8re son moelleux incomparable. Le caill\u00e9 est <strong>affin\u00e9 entre 5 et 10 jours<\/strong>, puis le fromage repose \u00e0 nouveau une dizaine de jours dans son emballage naturel.<\/p>\n<p><!-- \/wp:paragraph --><!-- wp:paragraph --><\/p>\n<p><a href=\"https:\/\/www.fromagerie-banon.fr\/\" target=\"_blank\" rel=\"noreferrer noopener\">La fromagerie de Banon<\/a> (qui fournit 50 tonnes de ce doux fromage par an soit 60% de la production totale) commande pas moins de <strong>5 millions de feuilles chaque ann\u00e9e ! <\/strong>La r\u00e9colte a lieu \u00e0 l&rsquo;automne dans les C\u00e9vennes, en Corse, sur l&rsquo;Albion et en Ard\u00e8che. href=\"https:\/\/laboxfromage.fr\/blog\/fromages-aop-aoc-igp\/\" data-type=\"post\" data-id=\"14409\">Appellation d&rsquo;Origine Contr\u00f4l\u00e9e<\/a> et son Appellation d&rsquo;Origine Prot\u00e9g\u00e9e (son pendant europ\u00e9en si l&rsquo;on puis dire) en 2003 : c&rsquo;est <strong>le tout premier de la r\u00e9gion PACA \u00e0 arborer cette reconnaissance ! <\/strong>C&rsquo;est \u00e9galement l&rsquo;une des plus petites aires d&rsquo;AOC fromag\u00e8res en France. <strong>Son terroir est compos\u00e9 de 179 communes<\/strong> de moyenne montagne et ayant un climat m\u00e9diterran\u00e9en.
