On diff\u00e9rencie \u00e9videmment\u00a0<strong>coagulation sanguine et coagulation laiti\u00e8re<\/strong>\u00a0! La premi\u00e8re est la transformation que subit le sang liquide en gel quasi solide, ce gel ayant pour but d&rsquo;arr\u00eater une h\u00e9morragie. C&rsquo;est une des \u00e9tapes de l\u2019h\u00e9mostase.<\/p>\n<p><strong>La coagulation du lait repose sur le m\u00eame principe<\/strong>, m\u00eame si aucune blessure de la bouteille de lait n&rsquo;est requise. On parle ici du processus deformation du gel de cas\u00e9ine lorsque le lait caille. Elle a pour r\u00f4le de casser les prot\u00e9ines du lait (appel\u00e9es cas\u00e9ine) pour faire vaciller sa structure, le solidifier et donc le dig\u00e9rer.\u200b<\/p>\n<p>En utilisant cette pr\u00e9sure par la main de l&rsquo;homme,\u00a0<strong>on reproduit cette action et on fait ainsi cailler le lait<\/strong>, qui est une \u00e9tape primordiale dans la fabrication du fromage. On obtient la pr\u00e9sure en faisant mac\u00e9rer des caillettes de bovid\u00e9s et en filtrant le jus obtenu.<\/p>\n<p><strong>Quand on fabrique du fromage,\u00a0<\/strong>on utilise du lait auquel on ajoute de la pr\u00e9sure donc. Elle va venir faire s&rsquo;agglom\u00e9rer les prot\u00e9ines du lait, qui vont se d\u00e9poser au fond du r\u00e9cipient en phasant. Pour autant, <strong>d&rsquo;autres techniques de coagulation du lait existent<\/strong>.<\/p>\n<p><!-- \/wp:paragraph --><!-- wp:paragraph --><\/p>\n<p><strong>On peut ainsi r\u00e9aliser un caillage du lait avec des ferments lactiques<\/strong>. Cette fermentation lactique est plus longue car le processus est naturel et progressif : le lait va s&rsquo;acidifier et se figer petit \u00e0 petit, au contact de l&rsquo;air libre.<\/p>\n<p><!-- \/wp:paragraph --><!-- wp:paragraph --><\/p>\n<p>Le caill\u00e9 obtenu est plus fragile que celui empr\u00e9sur\u00e9.
