On le nomme aussi vacherin du Haut-Doubs, et b\u00e9n\u00e9ficie d&rsquo;une AOP. Son cousin Mont-d&rsquo;Or est quant \u00e0 lui un vacherin suisse : celui du canton de Vaud, et non le vacherin fribourgeois !\u00a0<\/p>\n<p>Le mont d&rsquo;or est un fromage \u00e0 <strong>p\u00e2te molle et cro\u00fbte lav\u00e9e<\/strong>, fabriqu\u00e9 dans le Jura \u00e0 partir de <strong>lait cru exclusivement<\/strong>, et reconnaissable \u00e0 son \u00e9crin de bois. En effet, ce fromage se transporte et se d\u00e9guste directement dans sa <strong>bo\u00eete ronde en \u00e9pic\u00e9a<\/strong>.<\/p>\n<p>Particuli\u00e8rement <strong>souple et cr\u00e9meux<\/strong>, c&rsquo;est v\u00e9ritablement un fromage qui nous fait dire \u00ab\u00a0mmmmmh\u00a0\u00bb et saliver rien qu&rsquo;\u00e0 l&rsquo;\u00e9vocation de son nom. En fait, il est <strong>tellement coulant<\/strong> qu&rsquo;on le mange surtout \u00e0 la cuill\u00e8re, parce qu&rsquo;il est presque impossible de <a href=\"https:\/\/laboxfromage.fr\/blog\/couper-fromage\/\">le d\u00e9couper<\/a>. Il a la particularit\u00e9 d&rsquo;\u00eatre <strong>fabriqu\u00e9 du 15 ao\u00fbt au 15 mars\u00a0<\/strong>exclusivement, et\u00a0<strong>disponible \u00e0 la vente du 10 septembre au 10 mai\u00a0<\/strong>uniquement. Il culmine \u00e0 1461 m d&rsquo;altitude.<\/p>\n<p><strong>L&rsquo;\u00e9pic\u00e9a est au coeur de la fabrication<\/strong>\u00a0du mont d&rsquo;or : il est utilis\u00e9 pour sangler le fromage mais aussi pour construire sa bo\u00eete. Cette essence de bois a \u00e9t\u00e9 choisie pour\u00a0<strong>sa souplesse et son odeur<\/strong>.<\/p>\n<p>Pour bien choisir son fromage mont d&rsquo;or, il faut chercher <strong>une cro\u00fbte un peu pliss\u00e9e<\/strong> mais pas trop, et aussi uniform\u00e9ment rose que possible. Et oui, <a href=\"https:\/\/laboxfromage.fr\/blog\/manger-croute-fromage\/\">la cro\u00fbte du mont d&rsquo;or se mange<\/a>, plut\u00f4t deux fois qu&rsquo;une m\u00eame d&rsquo;\u00e9pic\u00e9a<\/li>\n<li>le prix d&rsquo;un mont d&rsquo;or oscille de 15\u20ac \u00e0 20\u20ac le kilo<\/li>\n<li>environ 400 \u00e9leveurs produisent du lait \u00e0 mont d&rsquo;or, gr\u00e2ce \u00e0 des vaches Montb\u00e9liarde et Simmental<\/li>\n<li>il faut 7 litres de lait pour fabriquer 1kg de mont d&rsquo;or<\/li>\n<li>ceux qui fabriquent les sangles en \u00e9corce d&rsquo;\u00e9pic\u00e9a sont appel\u00e9s des sangliers<\/li>\n<li>c&rsquo;est au 18e si\u00e8cle que l&rsquo;on trouve les premi\u00e8res traces \u00e9crites du fromage mont dor, \u00e0 la table du data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<p>La v\u00e9ritable recette de la bo\u00eete chaude propose de cuisiner le fromage mont d&rsquo;or avec du vin blanc du Jura, des patates et des saucisses de Morteau. L&rsquo;id\u00e9e est de <strong>creuser le centre du fromage<\/strong> (qu&rsquo;on aura laiss\u00e9 dans sa bo\u00eete en bois \u00e9videmment, celle-ci passe au four) et d&rsquo;<strong>y verser 5cl de vin blanc<\/strong>. Puis, on l&rsquo;enfourne <strong>25min \u00e0 220\u00b0 C<\/strong>.<\/p>\n<p>Si le vacherin mont d&rsquo;or au four se mange chaud, il ne faut pas pour autant se pr\u00e9cipiter dessus \u00e0 sa sortie du four ! <strong>Attendez un tout petit peu<\/strong> qu&rsquo;il refroidisse : vous \u00e9viterez de vous br\u00fbler la langue, et surtout, cela lui donnera l&rsquo;opportunit\u00e9 de <strong>re-d\u00e9velopper un peu ses ar\u00f4mes.<\/strong><\/p>\n<ul>\n<li>avec de la bi\u00e8re blonde et du sirop d&rsquo;\u00e9rable (<a Alors pour continuer de jouer la carte locale, <strong>d\u00e9couvrez le Cr\u00e9mant du Jura.<\/strong> Dans cette m\u00eame dynamique, un Pommeau ou un Champagne seront savoureux.<\/p>\n<p>Enfin, du c\u00f4t\u00e9 houblonn\u00e9 de la force, <strong>des bi\u00e8res blondes de style<\/strong> <strong>Trappistes<\/strong> sont tout indiqu\u00e9es avec les fromages fondus.
