persill\u00e9e<\/strong> fabriqu\u00e9 \u00e0 partir de lait de vache.<\/p><p>Sa particularit\u00e9 est d&rsquo;\u00eatre <strong>le seul fromage fabriqu\u00e9 selon un processus traditionnel <\/strong>consistant \u00e0 m\u00e9langer du lait de la veille chauff\u00e9 ET de lait cru et chaud de la traite du matin. Appellation d&rsquo;Origine Prot\u00e9g\u00e9e (AOP, pendant europ\u00e9en de l&rsquo;AOC) en <strong>2001<\/strong>, la m\u00eame ann\u00e9e que le P\u00e9lardon.<\/p><p>Comme pour tous les fromages prot\u00e9g\u00e9s par <a href=\"https:\/\/laboxfromage.fr\/blog\/fromages-aop-aoc-igp\/\" target=\"_blank\" rel=\"noopener\">ces labels<\/a>, la production du Bleu de Vercors-Sassenage <strong>doit respecter un certain nombre de r\u00e8gles<\/strong> dict\u00e9es par un <a href=\"https:\/\/www.inao.gouv.fr\/produit\/14199\" target=\"_blank\" rel=\"noopener\">cahier des charges<\/a>.<\/p><p>Le Du fait du relief et du climat montagnard rendant difficile le transport du lait, celui-ci \u00e9tait <strong>transform\u00e9 directement sur place par les paysans<\/strong>, en un fromage : le Bleu dit des Monts de Sassenage.<\/p><p>Sassenage, commune de la p\u00e9riph\u00e9rie de Grenoble, \u00e9tait \u00e0 l&rsquo;\u00e9poque le lieu de r\u00e9sidence du <strong>Seigneur de Sassenage<\/strong>, dont le domaine s&rsquo;\u00e9tendait au XIVe si\u00e8cle au c\u0153ur du massif du Vercors et jusqu&rsquo;au Royans. Le fromage \u00e9tait alors collect\u00e9 comme imp\u00f4t par les Seigneurs de Sassenage et sa vente ne sera autoris\u00e9e qu&rsquo;\u00e0 partir de 1338.<\/p><p>Avec le temps, <strong>la renomm\u00e9e de ce Bleu va peu \u00e0 peu s&rsquo;\u00e9tendre<\/strong> et celui-ci sera vendu aux march\u00e9s de Grenoble, puis distribu\u00e9 ailleurs en France.<\/p><p>Apr\u00e8s une baisse au d\u00e9but du XXe si\u00e8cle, ce tr\u00e9sor lact\u00e9 alpin conna\u00eet une <strong>renaissance dans les ann\u00e9es<\/strong> 90 et il est aujourd&rsquo;hui un incontournable des plateaux de
