\u00ab\u00a0Camembert de Normandie\u00a0\u00bb est prot\u00e9g\u00e9e par une AOC et une AOP, il n&rsquo;en est pas de m\u00eame pour le terme g\u00e9n\u00e9rique de \u00ab\u00a0Camembert\u00a0\u00bb !\u00a0 On estime ainsi que le <strong>v\u00e9ritable Camembert de Normandie repr\u00e9sente seulement\u00a04 %<\/strong> des Camemberts que l&rsquo;on trouve sur le march\u00e9.<\/p><p>Et si l&rsquo;on se penche sur la production fermi\u00e8re, les chiffres sont encore plus bas : en 2021, <strong>seules 4 fermes <\/strong>assuraient la production de Camembert de Normandie d&rsquo;affinage. Si un Camembert est affin\u00e9 pendant une longue dur\u00e9e, des <strong>pigmentations brun-rouge peuvent \u00e9galement appara\u00eetre<\/strong>, que l&rsquo;on doit cette fois-ci \u00e0 la bact\u00e9rie dite de \u00ab\u00a0ferment du rouge\u00a0\u00bb (<em>brevibacterium linens<\/em>).<\/p><p>La p\u00e2te du Camembert est <strong>lisse<\/strong>, <strong>souple<\/strong> et d&rsquo;une couleur allant <strong>de l&rsquo;ivoire au jaune clair<\/strong>, avec un noyau blanc si le fromage est demi-affin\u00e9. Lorsqu&rsquo;un Camembert est affin\u00e9 pour une dur\u00e9e sup\u00e9rieure \u00e0 35 jours, on dit qu&rsquo;il est \u00ab\u00a0fait \u00e0 :\u00a0<\/p><ul><li><strong>Appellation d&rsquo;Origine Contr\u00f4l\u00e9e<\/strong> (AOC) en 1982<\/li><li><strong>Appellation d&rsquo;Origine Prot\u00e9g\u00e9e<\/strong> (AOP) en 1996<\/li><\/ul><p>Pour utiliser la d\u00e9nomination\u00a0 \u00ab\u00a0Camembert de Normandie\u00a0\u00bb, le fromage doit avoir \u00e9t\u00e9<strong> produit dans le respect d&rsquo;une longue liste mati\u00e8res grasses souhait\u00e9.<\/li><li><strong>Empr\u00e9surage<\/strong> pour permettre le caillage du lait.<\/li><li><strong>Moulage<\/strong> \u00e0 la louche.<\/li><li><strong>\u00c9gouttage<\/strong> pour enlever le serum restant.<\/li><li><strong>Retournement<\/strong> et ajout d&rsquo;une plaque m\u00e9tallique sur le dessus du fromage pour
